Aamiaisleipä kevätsipulilla/Breakfast bread with spring onion


Tällä viikolla Lidl:n satokausikalenterissa pääraaka-aineena on kevätsipuli. Kevätsipuli antaa ruokiin hienostuneen sipulin maun ja menee valehtelematta lähes mihin tahansa: kastikkeisiin, salaatteihin, leiville…vain mielikuvitus on rajana! Se sopii etenkin loistavasti eri lihojen, kalojen ja äyriäisten kanssa. Sitä käytetään paljon raaka-aineena itämaisissa- sekä japanilaisessa keittiössä. Tällä kertaa halusin tehdä helpon, toimivan ja nopean aamiaisen, joka maistuu varmasti koko perheelle. Leipä on kananmunan ansiosta hieman tavallista täyttävämpi ja sillä jaksaa pitkälle päivään. Nautin tehdä tätä leipää aamiaisen yhteydessä arkisin sekä viikonloppuisin ja silloin tällöin myös tarjoilen leivän lohen tai graavilohen kanssa. Näin leivästä tulee entistä ruokaisampi. Tämä kevyt ja helppo leipä onkin täydellinen juuri esimerkiksi viikonlopun myöhäisiin aamuihin, iltapäivän brunssille tai vaikka evääksi piknikille!

Spring onion is versatile in cooking. Lovely that it is in season now and you can cook so many dishes with it. It’s wonderful especially in different dressings, sauces, salads and breads.
It goes really well with meats, fishes and seafoods. It’s also really common in japanice and thai kitchen. I wanted to share with you guys an easy breakfast tip, that I use in my every day life. This is so quick and easy to make and it makes bread more filling. It goes for the whole family as well. You can make it healthy and refreshing using avocado and serve it with sugar sweet cherry tomatoes.
To make it for brunch or lunch, I sometimes serve it with gravlax or smoked salmon. I really recommend you to try it, it will be a hit and it will definitely become one of your all time favourite that you can make in a few minutes. Hope this will give you some inspiration. What’s fun with this bread is, that you can always do different variations using different breads or spices and make it brand new again! Enjoy!

Aamiaisleipä kevätsipulilla

4 viipaletta maalaisleipää
1 rkl Pohjolan Meijeri voita
2 rkl Primadonna oliiviöljyä
4 kananmunaa
2 Avocado
100 g Kirsikkatomaattia
2-4 kevätsipulin vartta

50 g rucolaa
ripaus Kania cayennepippuri
ripaus Kania mustapippuria
loraus Primadonna oliiviöljyä

Leikkaa leivästä neljä noin ½ cm paksuista siivua. Tee leipäpaloihin reikä noin 5 cm stansilla, juomalasilla tai sitten veitsellä. Silppua kevätsipuli, puolita pestyt tomaatit ja kuori avokado, poista kivi ja leikkaa siivuiksi. Laita kuumalle pannulle ruokalusikallinen voita ja oliiviöljyä. Asettele leivät paistinpannulle. Ripottele leipien reikiin kevätsipulia sekä riko kananmuna siihen. Anna leipien paistua niin kauan että kananmuna jähmettyy. Poista leivät pannulta ja asettele leivän päälle avokaadon siivuja ja asettele toinen leipä sen päälle. Koristele leivät avocado siivuilla, kirsikkatomaatin puolikkailla, kevätsipulilla ja rucolalla. Lisää vielä loraus oliiviöljyä sekä ripaus cayennepippuria ja mustapippuria. Tee toinen leipä samoin ja nauti.

Breakfast bread with spring onion

2-4 portions
20 min

4 countrybread slices
1 tbsp butter
2 tbsp olive oil
4 eggs
2 avocados, stone removed, cut into slices
100 g cherry tomatoes, cut in half
2-4 spring onions, finally chopped

50 g rucola
pinch of cayenne pepper
pinch of black pepper
pinch of olive oil

Make about 5 cm holes into bread slices with drinkglass or knife.
Put one tablespoon of butter and olive oil into a hot pan. Place the breads on the frying pan. Sprinkle the spring onions into holes on the bread and break the egg on it. Let the bread bake for as long as the egg have set.
Remove the bread from the pan and place it on a plate. Next add avocado slices and some rucola on top and place another bread on it. Decorate the breads with avocado slices, cherry tomatoes, spring onion and rucola. Add a little bit olive oil, cayenne pepper and black pepper. Make another bread in the same way and enjoy.
