Crayfish parties have transformed over the years and nowadays include schnapps songs, party games
and beautifully made decorations. There are a lot of traditions involved on crayfish celebration and
organizing this party is a wonderful way to get together with friends and family.
This classic but oh so good crayfish broth tastes just heavenly!

Kiehauta vesi. Lisää suola ja sokeri ja noin puolet kruunutillistä. Keitä 15 minuuttia. Lisää elävät ravut
yksi kerrallaan kiehuvaan liemeen. Keitä rapuja 8–10 minuuttia. Jäähdytä ravut mahdollisimman nopeasti
ja vaihda keitinliemen tilli tuoreeseen. Laita ravut keitinliemessä jääkaappiin. Ravut ovat parhaimmillaan
oltuaan jääkaapissa 8–24 tuntia. Nauti ravut paahdetun paahtoleivän, voin ja tillin kera!

Serving four persons
3–4 litres of water
1 dl coarse salt
2–4 sugar cubes
1 bunch of crown dill
10–20 crayfish
Boil the water. Add salt, sugar and about half of the crown dill. Cook for 15 minutes. Add living crayfish
one by one into the boiling broth. Cook the crayfish for 8 to 10 minutes. Cool the crayfish as quickly as
possible and change the dill of the broth to a fresh one. Put the crayfish into a frying pan in the
refrigerator. The crayfish are at its best when they have been in the refrigerator for 8 to 24 hours. Enjoy
crayfish with roasted toast, butter and fresh dill!
