Kasvisburgerit/Vegetarian hamburgers

1pkt porlamminvege juustoa, viipaleiksi leikattuna
4kpl hampurilais sämpylöitä
2 avocadoa
1 punasipuli
3 tomaattia
1 munakoiso
1 nippu lehtikaalia

Täytteeksi:
Green cashewtahna

3dl cashew pähkinöitä liotettuna
1 vihreä paprika siemenet poistettuna
1 jalopeno kokonaisena
1 avocado
1 limen kuori ja mehu
1½tl valkosipulia
nippu korianteria

Hummus:

1 prk (400g) kikherneitä, keitettynä, valutettuna
3-4 rkl oliiviöljyä
2 rkl tahinia (seesaminsiementahnaa)
1 tl valkosipulia
2 rkl sitruunamehua
himalajansuolaa
mustapippuria

Leikkaa ensimmäiseksi munakoisot pyöreiksi siivuiksi. Tee veitsellä pieniä viiltoja munakoisojen pintaan ja lisää suolaa viipaleiden päälle niin, että ne alkavat hieman hikoilla ja viipaleiden päälle kertyy nestettä. Pyyhi sen jälkeen munakoisot ylimääräisestä nesteestä ja laita viipaleet leivinpaperille sekä uunipellille. Lisää päälle reilusti oliiviöljyä. Mausta viipaleet suolalla, valkosipulilla ja rosmariinilla ja paista 180 asteessa noin 25–30 minuuttia kunnes viipaleet ovat pehmenneet ja kypsentyneet.

Tee seuraavaksi hummustahna. Laita kaikki hummuksen raaka-aineet monitoimikoneeseen ja soseuta tasaiseksi tahnaksi. Tee sitten cashewtahna. Sekoita cashewthnan ainekset joko sauvasekoittimella tai blenderissä tasaiseksi massaksi.

Lämmitä hampurilaissämpylöitä sekä juustoviipaleita hieman. Seuraavaksi okoa hampurilaiset. Laita hampurilaissämpylän päälle hummusta, lehtikaalia, juustoviipale, munakoisoviipaleita, avocadoviipaleita, tomaattia ja punasipulia sekä viimeisenä silauksena raikasta ja tulista cashewtahnaa. Tarjoile juureslastujen tai bataattiranskalaisten kera. Nauti!


Vegetarian hamburgers

(serving four persons)

1 packet of Porlammi’s vegetarian cheese, sliced
4 hamburger buns
2 avocados
1 red onion
3 tomatoes
1 eggplant
bunch of kale

Filling: Green cashew paste

3dl cashew nuts, soaked
1 green pepper, seeds removed
1 jalapeno
1 avocado
1 lime zest and its juice
1½ tsp garlic
bunch of coriander

Hummus

400g chickpeas, cooked and drained
3–4 tbs olive oil
2 tbs tahini
1 tsp garlic
2 tbs lemon juice
Himalayan salt
black pepper

First cut the eggplant into round slices. Do small cuts on top of the eggplant slices so that they start to slightly sweat and liquid accumulates on the slices. Wipe off the extra liquid and put the eggplant slices onto baking sheet and baking tray. Add on top olive oil, salt, garlic and rosemary and heat in 180 degrees in the oven for about 25–30 minutes until the eggplants are soft and cooked.

Next make the hummus paste. Put all the ingredients of hummus into a blender and blend them to a smooth paste. After that make the cashew paste. Blend it either with a hand blender or in a blender into a smooth paste.

Heat up just a little bit the hamburger buns and cheese slices. Then make the burgers. Put hummus on top of the hamburger bun, then kale, slice of cheese, eggplant slices, avocado slices, tomato, red onion and last but not least the fresh and hot cashew paste. Serve with root chips or sweet potato fries. Enjoy!
