Mandariini-raakajäätelö/Raw mandarin ice cream

Tällä viikolla Lidl:n satokausikalenterissa pääraaka-aineena on mandariini. Mandariini sopii moneen, niin jälkiruokiin, salaatteihin kuin pääruokiinkin. Halusin tehdä terveellisen raakajäätelön käyttäen mandariinia pohjana. Mandariinin lempeä, makea ja sitruksinen maku antaa keveän maun tähän terveelliseen jälkiruokaan, joka maistuu varmasti koko perheelle.

This week’s main ingredient is mandarin. Mandarin fits well in many dishes: salads, main courses and desserts. I wanted to create healthy raw ice cream using mandarin as a base. Mandarin is a gentle and sweet and gives this ice cream a pleasant citrusy flavor. This healthy and low-calorie dessert is good for a whole family.

Valmistusaika: 8 t (pakastus) + 10 min
2 annosta

2 banaania
6–8 mandariinia
½ dl Vitasia kookosmaitoa/Lidl:n luomu kauramaito
2 tl raastettua luomu inkivääriä
1 limen kuori

1 rkl siitepölyä
1 rkl Alesto pistaasipähkinöitä
1 rkl kuivattuja sokeroituja inkivääripaloja tai muita kuivattuja hedelmiä
1 tl limetinkuorta raastettuna

Kuori ja viipaloi hedelmät. Laita hedelmät pakastuspussiin tai -rasiaan ja pakasta noin 8 tuntia. Raasta inkivääri ja limen kuori. Kaada pakastetut hedelmät blenderiin ja sekoita tasaiseksi. Lisää kookosmaitoa tiputellen, jotta saat hyvän koostumuksen. Mausta inkiväärillä ja limetinkuorella. Laita seos takaisin pakastimeen noin puoleksi tunniksi. Kuori ja murskaa pistaasit. Jaa jäätelö annoskulhoihin ja koristele.

Raw mandarin-banana “ice cream”

2 portions
Freezing time 8h
Active preparation 10 min


2 bananas, chopped and frozen
6-8 mandarins, peeled wedges, frozen
½ dl coconut milk/organic oat milk
2 tsp grated fresh ginger
zest of 1 lime

For decoration (suggestions):

1 tbs bee polle
1 tbs pistachio nuts, chopped
1 tbs candied ginger, sliced
1 tsp grated lime zest

Peel and cut fruits into smaller pieces. Freeze for 8 hours or overnight until fruits are frozen solid. Put all the frozen fruits in a blender and blend until smooth. Add coconut milk little by little to form an even ice cream texture. Add grated ginger and lime zest. Put the mixture into a freezer safe container and let it set in the freezer for about 30 min before serving. Divide the mixture into serving dishes and decorate. Enjoy!
