One of my favorite things are slow mornings when I have time to enjoy my coffee and read the newspaper. This recipe is great for breakfast, brunch and also as a snack. Give it a try – you will love it!
Salmon Bagels for Brunch
1 whole grain bagel
30 g smoked salmon
spinach
Healthy egg spread
2 eggs, hard-boiled
2-3 tbsp cream cheese (light) or soy cream cheese
chives
salt
black pepper
Fennel Cucumber Relish
¼ fennel, thinly sliced
2,5 cm piece of cucumber, cut into thin sticks (julienne)
2 tbsp quark
1 tsp lemon juice
salt
black pepper
Start with the egg spread. Mix the eggs and the cream cheese together in a bowl wiht a fork. Season with chives, salt and black pepper. Put aside.
Then mix all of the ingredients of the relish in another bowl. Season with salt and pepper.
Half the bagel and toast it. Spread a generous layer od the egg spread on it. Then add some spinach, smoked salmon and the relish. Enjoy!
Brunssibagel

1 kokojyväbagel
30 g savulohta
pinaattia
Kevyt munavoi
2 kananmunaa, keitettynä
2-3 rkl kevyttuorejuustoa tai soijatuorejuustoa
ruohosipulia
suolaa
mustapippuria
Kurkkurelissi
¼ fenkolia, ohuina siivuina
2,5 cm pala kurkkua, ohuina tikkuina
2 rkl maitorahkaa
1 tl sitruunamehua
suolaa
mustapippuria
Sekoita kananmunat ja tuorejuusto haarukalla sekaisin. Mausta ruohosipulilla, suolalla ja pippurilla.
Sekoita toisessa kulhossa kaikki kurkkurelissin ainekset. Mausta suolalla ja pippurilla.
Leikkaa bagel ja paahda se. Levitä munavoita bagelin väliin ja lisää päälle pinaattia, lohta ja kurkkurelissiä, ja peitä kannella. Nauti!
