Magical Porridge for Christmas

Magical Almond Milk Rice Porridge

This Magical Christmas rice porridge is lovely, healthy and also dairy free. Rice puddings and rice porridges are found in nearly every area of the world. It usually includes traditions, celebration with family and bringing people together. At Christmas time I especially love rice porridge and it is a big Christmas tradition in all the Nordic countries. The whole family comes together in the Christmas morning hoping to find the hidden blanched almond from the rice porridge. Whoever finds it on his plate will have good luck next year. This is an old custom in all the Nordic countries, and it is fun for the whole family.

Serves 4–5
2 dl water
2 dl whole grain pudding rice
1 l almond milk (see page 13)
ó vanilla bean with the seeds
scooped out
ó tsp cinnamon
pinch of allspice
pinch of cloves
1–2 tbsp agave syrup
Himalayan salt
cinnamon
cane sugar

Boil the water in a large pot. Add the pudding rice and cook until the water is absorbed. Add the almond milk and scooped out vanilla seeds. Add the spices and simmer while stirring regularly until the porridge is ready. Serve with cinnamon and cane sugar.

Mantelimaitoriisipuuro

4–5 hengelle
2 dl vettä
2 dl tummaa puuroriisiä (Risella)
1 l mantelimaitoa (s. 13)
1/2 vaniljatankoa, siemenet
kaavittuna
1/2 tl kanelia
ripaus maustepippuria
ripaus neilikkaa
1–2 rkl agavesiirappia
himalajansuolaa

Lisäksi
kanelia
ruokosokeria

Kiehauta vesi isohkossa kattilassa. Lisää joukkoon puuroriisi ja anna veden imeytyä riisiin. Lisää mantelimaito ja kaavitut vaniljatangon siemenet. Lisää mausteet ja anna hautua koko ajan hämmentäen, kunnes puuro on kypsää. Tarjoile kanelin ja ruokosokerin kera.
