Parsa-Parmankinkkupiirakka/Asparagus Pie


Tällä viikolla Lidl:n satokausikalenterissa pääraaka-aineena on parsa. Parsa taipuu moneen ja halusin kehitellä siitä herkullisen piirakan käyttäen parmankinkkua. Tämä suussasulava piiras on ihana alkupalana ja toimii myös loistavasti erilaisissa juhlissa.

This week’s main ingredient is asparagus. You can do so many different recipes using asparagus. This time I wanted to create salty asparagus parma ham pie which fits perfectly for this spring and summer graduation parties.

Parsa parmankinkku piirakka

250 g lehtitaikinaa, isoja levyjä
125 g Lovilio mozzarellajuustoa, ohuiksi siivuiksi leikattuna
50 g Italiamo parmesaania
1 kananmuna

1 nippu parsaa,kuorittuna
90 g Italiamo parmankinkkua

70 g rucolaa
20 g Italiamo parmesaania
½ sitruuna raastettuna
Primadonna oliiviöljyä

Asettele lehtitakina levyjä leikkuu laudalle sulamaan. Leikkaa lehtitaina levystä suikaleita.
Laita yhden lehtitaikinalevyn molemmille reunoille 2 suikaletta,jotka kiinnitetään kananmunalla. Tee muut levyt samalla tavalla. Seuraavaksi töki haarukalla pieniä reikiä levyn pohjaan. Seuraavaksi laita täytteet. Asettele mozzarella juustosiivut.
Kääri kuoritun parsan ympärille parmankinkkua ja asettele käärityt parsat juuston päälle.
Lopuksi voitele piirakka kananmunalla ja paista 200-asteisessa uunissa noin 20–25 minuuttia.
Tarjoilla piirakka rucolan, sitruuna raasteen, parmesaanin ja oliiviöljyn kera.

Asparagus Pie

4 portions

250 g puff pastry
125 g mozarella cheese, cut into thin slices
50 g parmesan
1 egg

1 bunch asparagus, peeled
90 g parma ham

for Decoration
70 g rocket salad
20 g parmesan
½ lemon grated
olive oil

Set the puff pastry sheets on a surface and let it soften. Cut thin stripes from the puff pastry sheets.
Add one puff pastry sheet on a surface. Glue thin stripes with an egg mixture on both sides of the puff pastry sheet. Do the other sheets in the same way. Next poke small holes in the middle of the pastry sheet with a fork. Then add fillings and mozzarella slices. Next add parma ham wrapped asparagus and lay them on top of mozzarella cheese. Brush the pie with egg wash and add the pies into the oven 200 degree celsius (400 fahrenheit) and bake about 20-25 minutes.
In the end add some rocket salad, grated lemon zest, grated parmesan and a drizzle of olive oil.
